A quick and easy xanthan gum protein fluff recipe that creates a light, airy, and high-protein dessert in just minutes.
Ingredients
1 scoop protein powder
1/2 cup milk or plant-based milk
1/4 teaspoon xanthan gum
1 to 1 1/2 cups ice cubes
1–2 teaspoons sweetener (optional)
Optional: frozen fruit, cocoa powder, nut butter
Instructions
1. Add protein powder, liquid, and xanthan gum to blender
2. Add ice cubes and optional ingredients
3. Blend on high until thick and fluffy
4. Scrape sides and blend again if needed
5. Adjust texture with more liquid or ice
6. Serve immediately
Notes
Do not use too much xanthan gum
Use cold ingredients for best results
