A light and refreshing sugar free gelatin recipe made with only 3 ingredients. Perfect for healthy snacking, weight management, and easy meal prep.
Ingredients
2 tablespoons plain gelatin powder
1 cup sugar-free fruit juice
1 cup cold water
Fresh berries for garnish optional
Mint leaves optional
Instructions
1. Pour cold water into a bowl and sprinkle gelatin over the top
2. Let the gelatin bloom for 5 minutes
3. Warm the sugar-free juice in a saucepan over low heat
4. Whisk the bloomed gelatin into the warm juice until dissolved
5. Pour mixture into serving cups or molds
6. Refrigerate for at least 3 hours until firm
7. Serve chilled with optional berries or mint
Notes
Do not boil the juice
Use sugar-free juice for best results
Store covered in the refrigerator for up to 5 days
Agar-agar may be used as a vegetarian alternative
