Crispy roasted veggie flatbread slices topped with colorful vegetables and melted cheese, perfect for a quick and healthy meal.
Ingredients
2 flatbreads
1 zucchini sliced
1 red bell pepper sliced
1 yellow bell pepper sliced
1 small red onion sliced
1 cup cherry tomatoes halved
2 tbsp olive oil
2 garlic cloves minced
1 tsp Italian seasoning
Salt and pepper to taste
1 to 1.5 cups mozzarella cheese
Instructions
1. Preheat oven to 200C or 400F
2. Slice all vegetables evenly
3. Toss vegetables with olive oil garlic seasoning salt and pepper
4. Roast for 15 to 20 minutes
5. Place flatbread on baking tray
6. Spread roasted vegetables on flatbread
7. Add cheese on top
8. Bake for 8 to 10 minutes until cheese melts
9. Slice and serve warm
Notes
Use whole wheat flatbread for healthier option
Add grilled chicken or chickpeas for protein
Use dairy free cheese for vegan version
Do not overcrowd vegetables while roasting
