A quick and crowd-pleasing Monte Cristo Breakfast Casserole with bread, turkey, smoked chicken, Swiss cheese, eggs, and a sweet raspberry topping.
Ingredients
1 loaf French bread, cubed
8 eggs
2 cups milk
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup diced turkey breast
1 cup diced smoked chicken
2 cups shredded Swiss cheese
2 tablespoons melted butter
Powdered sugar, for serving
1/2 cup raspberry preserves
1 tablespoon warm water
Instructions
1. Grease a 9×13-inch baking dish and spread the cubed French bread evenly in the dish.
2. Sprinkle the diced turkey breast, smoked chicken, and shredded Swiss cheese over the bread.
3. In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper until smooth.
4. Pour the egg mixture evenly over the bread mixture, pressing lightly so the bread absorbs the custard.
5. Cover and refrigerate for 30 minutes or overnight for best results.
6. Preheat the oven to 350°F (175°C).
7. Bake for 45 to 50 minutes, until golden brown and set in the center.
8. Stir the raspberry preserves with warm water until smooth.
9. Dust the casserole lightly with powdered sugar and drizzle with raspberry sauce before serving.
Notes
Use day-old bread for the best texture.
Overnight chilling gives the casserole more flavor.
Swap smoked chicken with mushrooms for a meatless version.
Strawberry preserves can be used instead of raspberry.
Let the casserole rest for 10 minutes before slicing.
