A creamy, protein-packed lemon raspberry cottage cheese bake with a fresh citrus flavor and soft texture.
Ingredients
2 cups cottage cheese
2 eggs
1/4 cup sweetener
2 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
2 tbsp cornstarch
1 cup raspberries
Instructions
1. Preheat oven to 350°F and prepare baking dish
2. Blend cottage cheese until smooth
3. Mix with eggs, sweetener, lemon juice, zest, and vanilla
4. Add cornstarch and mix well
5. Fold in raspberries
6. Pour into dish and bake 30–40 minutes
7. Cool before slicing and serving
Notes
Use cornstarch for gluten-free version
Adjust sweetness to taste
Frozen raspberries can be used
