Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
3/4 cup sugar
1/2 cup vegetable oil
1 cup yogurt or sour cream
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
8 oz cream cheese
1/4 cup sugar
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F and line muffin tin
2. Mix dry ingredients in a bowl
3. Whisk wet ingredients separately
4. Combine wet and dry mixtures gently
5. Prepare cream cheese filling
6. Fill muffin cups halfway with batter
7. Add cream cheese filling and cover with batter
8. Bake for 18–22 minutes
9. Cool before serving

Use fresh lemon juice for best flavor
Do not overmix batter
