Soft and fruity cookies inspired by classic peach cobbler, packed with juicy peaches and warm cinnamon flavor.
Ingredients
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
3/4 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup diced peaches
1 tbsp sugar
1 tsp lemon juice
Instructions
1. Dice and prepare peaches
2. Mix dry ingredients
3. Cream butter and sugar
4. Add egg and vanilla
5. Combine wet and dry ingredients
6. Fold in peaches
7. Scoop dough onto tray
8. Bake at 175°C for 12–15 minutes
9. Cool and serve
Notes
Use fresh peaches for best flavor
Pat peaches dry to avoid soggy dough
Chill dough if too soft
