Ingredients
2 chicken breasts
1 tbsp olive oil
1 tsp paprika
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
Salt and pepper
1 lime
1 cup rice
2 cups water
2 bell peppers
1 onion
1 avocado
1 cup corn
1 cup black beans
Greek yogurt
Fresh herbs
Instructions
1. Cook rice until fluffy
2. Season and cook chicken until golden
3. Sauté peppers and onion
4. Assemble bowl with rice, chicken, veggies, and toppings
5. Finish with lime and herbs
Notes
Use Greek yogurt instead of sour cream
Swap rice with cauliflower rice for low-carb option
