Soft, creamy, and protein-packed baked blueberry cottage cheese breakfast bowls perfect for a healthy start.
Ingredients
1 cup cottage cheese
2 eggs
1/2 cup oats
2 tbsp maple syrup or honey
1 tsp vanilla extract
1/2 tsp baking powder
1/2–1 cup blueberries
Optional: cinnamon, lemon zest, pinch of salt
Instructions
1. Preheat oven to 180°C (350°F) and grease baking dish
2. Mix cottage cheese, eggs, sweetener, and vanilla
3. Add oats, baking powder, and spices
4. Fold in blueberries
5. Pour into baking dish
6. Bake 25–35 minutes until set
7. Cool slightly and serve
Notes
Use full-fat cottage cheese for best texture
Frozen blueberries can be used without thawing
Let cool slightly before serving
